Ingredients:
2 thin slices of cooked ham
1 carrot
1/2 yellow pepper
1/2 onion
2 celery sticks
1 bunch fresh parsley
1 spoon of capers
lemon
olive oil, salt, pepper
Meat:
Spread the turkey and beat slightly to make it thin, add salt and pepper slightly. Put the two slices of ham (and some leaf parsley if you like) on the turkey, and starting on one hand, roll the meat and tie it up with kitchen twine.
Boil the turkey in little salted water combined with the juice of half lemon (if necessary add during cooking) for about 50 minutes, often turning and soaking with the cooking sauce. You can add aromatic herbs: laurel, thyme, myrtle … Keep aside the cooking sauce.
Let cool the meat and keep it wrapped in a film, in the refrigerator for at least 3 hours. Or you can prepare the day before.
Sauce:
Chop the vegetables and stew them into little water, with salt and pepper for about 10 minutes so they remain crisp, and until the water is dried.
Whip roughly the parsley with capers, the juice of half lemon and two tablespoons of oil in order to obtain a sauce. Add the cooking sauce of the turkey and the vegetables, then mix all together.
Slice the turkey roll very thin (if possible machine), put it on a wide tray and add the vegeetable sauce. It’s perfect for summer evenings with friends, and not weight digestion because it’s a dish cooked without fats.
